Would you like to learn how to sharpen your knives using whetstones?
This course is for anyone who wants to sharpen their own knives by hand using Japanese whetstones.

Øystein Sandve lives in Bergen and runs Knivsliperiet alongside his work as a teacher. He has been sharpening knives professionally by hand since 2020 and has since held several knife-sharpening courses. In April he will visit Verkstedet to hold this workshop.

The course begins with a theoretical introduction on how to establish a new edge on a knife. You will learn the basics about whetstones, grit levels and different types of steel. The course is practical, so you will receive guidance and help with sharpening throughout.

Towards the end, you will learn about maintaining both your whetstones and your knives, as well as how to care for a sharp knife edge.

Please bring a couple of knives, ideally 3–4 kitchen knives, from home that you would like to give new life to.

If you already have your own whetstone, feel free to bring it and use it. Stones can also be borrowed if needed. These (type Naniwa Basic 220/1000) can be purchased after the course for NOK 410, which is about one hundred kroner below the average market price.

This course provides a solid foundation for further practice. It is best suited for beginners, but everyone is welcome to take part regardless of experience level.
